According to NFPA (National Fire Protection Association), there are 11,100 structure fires in restaurants and over $163 million in property damage. Mostly, fires start in the kitchen when fire flares into hood exhaust systems. Chemical system was mostly used and when modern cooking involving vegetable oils burning at high temperature, it was no longer capable of suppressing and staining extinguished fires. In November 1994, Underwriters laboratories introduced UL 300 standard and most jurisdictions now have mandated newly installed restaurant fire suppression systems that are UL 300 compliant.
